As much as I love hollandaise, drowning a healthy vegetable in butter and eggs is not something anyone should do on a regular basis.  Moreover, it’s not the best way to enjoy the delicate flavour of the artichoke itself.

So, this spring, I decided to experiment with something new.  My idea was to move beyond my comfort zone and try healthier options.  I was seeking a sauce that would deliver the gorgeous, bright lemon punch of hollandaise, and its silky mouthfeel, without all its fat, calories, and cholesterol.

This vegan garlic lemon aioli is the result of my trials.  The lemon in the sauce supplies a tart counterpoint which enhances the delicate flavour of the artichoke, while garlic and a hint of cayenne kick everything up a notch.  Using a base of cashew nuts and silken tofu makes this sauce rich and silky, without adding unnecessary fat and calories.   Best of all?  Garlic lemon aioli is ready to enjoy in under 10 minutes!

About This Recipe

Artichokes are easy to prep and prepare, following the easy instructions in my primer (Artichoke Primer).  If you prepare them in the microwave, as I do, the artichokes will be ready in just 15 minutes, start to finish!

The aioli recipe is also very simple.  However, if you are not using a high-speed blender, you will want to soak your cashew nuts for 3-4 hours or overnight to soften them up.  Other than that, it’s simply a question of popping the ingredients into the blender and blitzing them until they’re smooth!

Can I Eat Lemon Garlic Aioli with Anything Else?

Absolutely!  This sauce is a delicious complement to anything you might normally enjoy with hollandaise, including:

  • Fries,
  • Fish,
  • Eggs,
  • Asparagus,
  • Broccoli,
  • Crab, and
  • Toasted sandwiches.
