Simple Spicy Roasted Chickpeas, A Healthy Lunchbox or Cocktail Snack

Crunchy, spicy roasted chickpeas are a deceptively easy and delicious snack.  These chickpeas are great with cocktails, and make an easy lunchbox snack.  They’re also the perfect vehicle for a wide variety of seasonings.  

I am a sucker for salty snacks.  I love having something crunchy to nibble with my cocktail or while watching a movie.  However, like the rest of the universe, I have also woken up to the idea that chips and other starchy snacks are a bad idea.

So, recently, I’ve eaten a lot of spicy cocktail nuts.  Of course, I’ve varied the seasonings, and the varieties of nuts, in an effort to keep it interesting.  Nonetheless, I’ve begun missing chips again — which tells me I’m getting tired of eating all of those nuts, no matter how good they are for me.

Luckily , a friend turned me on to the idea of seasoned, roasted chickpeas.  Once they’ve been toasted in the oven, chickpeas are just as crunchy as chips or popcorn.  However, they’re lots healthier.

The Recipe

This recipe is extremely simple.  Using canned chickpeas, it takes mere minutes of prep work, and a little over half an hour in the oven.  So, no matter how busy you may be, this healthy snack is still accessible.

Better yet, chickpeas make a terrific canvas.  Once roasted, their flavour is fairly neutral.  So, the sky’s the limit as far as seasonings are concerned.  Here are a few ideas to get you started:

  • Baharat
  • Taco seasoning
  • Chile powder
  • Herbes de Provence
  • Fines Herbes
  • Chaat masala

  • 2 400 g tins chickpeas
  • 2 Tablespoons olive oil
  • 1/2 teaspoon fine sea salt, or to taste
  • 1 tablespoon, curry powder, or 1 teaspoon garlic powder + 2 teaspoons Italian herbs

  1. Preheat oven to 225° C.
  2. Drain and rinse chickpeas in two changes of water. Then, spread them out on paper towels or a dry kitchen towel to dry as the oven heats. Dispose of any loose skins. No need to remove them all, only those that come loose.
  3. Toss chickpeas with oil and salt.
  4. Spread in an even layer on a parchment lined baking sheet. Bake, stirring occasionally, until crisp and golden brown, about 35 minutes.
