These Spicy Oven-Baked Cauliflower Bites are bound to become a new family favorite.  A healthy and tasty snack for every day eating.

This Oven-Baked Cauliflower Bite recipe is inspired by my love for pakoras, an Indian snack.  I adore the fried version.  However, like everyone else, I am trying to feed my family lighter, healthier food.  Thus, I had to invent a trimmed down version so we could enjoy the flavors of vegetable pakoras more often.

This recipe is much easier to make than traditional fried pakoras.  In a matter of minutes, the cauliflower bites are in the oven — which is where the magic happens.  No need for deep frying, or oil splattering across the kitchen.

These delicious bites are light and healthy, though they feel decadent. They come together in mere minutes are bound to become as big a hit with your family as they are with mine.

These bites feel decadent, although they aren’t.  I find that having a tray of these morsels in the oven when folks come home satisfies my family’s immediate hunger.  That way, there is less temptation to nibble on carbs or other unhealthy snacks.

These cauliflower bites are also a hit at parties.  They’re light enough to enjoy straight through the evening.  If your family is anything like mine, though, they won’t last that long!

Condiments

This recipe is delicious on its own.   However, I like to serve it with Cool and Spicy Mint Chutney or Chimichurri.  It is worth the few minutes it takes to make a fresh sauce, as it provides a beautiful fresh contrast to the caramelized, roasted cauliflower bites.

This recipe is a healthier take on traditional cauliflower fritters. Baked in the oven, these toasty, spiced bites are lovely served with Cool and Spicy Mint Chutney.


  • 600 g (20 oz) cauliflower florets
  • 3 tablespoons olive oil
  • 1/2 teaspoon flaky sea salt, or to taste
  • freshly ground black pepper, to taste
  • 1/2 teaspoon turmeric
  • 1 teaspoon garam masala

  1. Preheat oven to 220°C (425° F).
  2. Line a baking tray with a silicone mat or baking paper.
  3. Ensure that the cauliflower florets are more or less equal sizes. Toss with oil, sea salt, and black pepper.
  4. Pop in the oven for 30 minutes (or until golden brown).
  5. Toss with turmeric and garam masala.
  6. Serve with Cool and Spicy Mint Chutney
