Spicy Small Batch Strawberry Jam

This delicious, small-batch strawberry jam recipe requires no canning equipment, no pectin, and less than 30 minutes to make.  Thanks to a spicy twist, it also bursts with flavor and tastes great!

As much as I love canning and I have cozy memories of days spent in the kitchen putting up preserves, I have difficulty finding the time to do such things with my own children.  Moreover, I am always curious about exploring new combinations and flavors.  So, I have trouble committing to big batches.

Enter fresh, seasonal, small-batch jams.  With recipes like this one, I can make the most of the season’s bounty and enjoy a bit of variety too.  Better yet, this quick, small recipe calls for significantly less sugar than a traditional jam recipe.

This jam is a lot more like a conserve than a traditional strawberry jam.  It is filled with fruit, not sugar.

Spicing It Up!

I was inspired to spice up my jams when I was in Paris a few years ago.  One of my favorite gourmet food shops offered me a taste of their strawberry jam.  One bite of this unusual jam hooked me because it was aromatic with spices.  In fact, the jam was seasoned with garam masala, a classic Indian spice mix!

Considering my love affair with spices, I don’t know why I never thought of that!  So, having recently prepared my Chinese Five Spice Powder to share with you, I decided to add it to this year’s jam.  The results?  Delicious!!  Bon appétit!

This delicious, small batch jam comes together in just 30 minutes, with no pectin, no hot water bath, and a lot less sugar.

  • 500 g (1 lb) fresh strawberries, hulled and sliced
  • 1 cup sugar
  • 2 Tablespoons fresh lemon juice
  • 1/2 teaspoon Chinese five spice powder

  1. Place sugar, berries, and lemon juice in a medium saucepan set over medium-high heat.
  2. Bring it to the boil (about 20 minutes), stirring occasionally. Then, reduce heat to medium and stir continuously until it begins thickens slightly and begins to look syrupy (about 5 more minutes).
  3. Stir in five spice powder. Remove from heat. Allow jam to cool thoroughly.
  4. Store in a clean, sealable container in the refrigerator for up to a month.

As the jam begins to get thicker, stir more frequently. When it coats the back of a spoon, the jam is ready.
